Even if the user has disabled the "Send my activity history to Microsoft" section in Activity History, Microsoft's Privacy Dashboard feature will still show the activity history of the application that the user is running on the PC.

You can go to Settings -> Privacy -> Activity History and check the "Send my activity history to Microsoft" box to disable this feature and test it.
