Ingredients to make coconut ice cream for 6 people
- Egg yolks: 3 pieces
- Sugar: 50g
- Coconut milk: 250 ml
- Tapioca starch: 1 tablespoon
- Coconut rice: 20 g
- Whipping cream: 250 ml
- Vanilla: 1 teaspoon or 1 tube vanilla powder
How to make coconut ice cream with a blender
Step 1: Put sugar and egg yolks in a bowl and beat well with a whisk. When the mixture turns pale yellow, it's done.
Step 2: Put coconut milk in the pot and put it on the stove until it boils, then turn off. Pour coconut milk into the egg bowl and beat until completely dissolved.
Step 3: Sift tapioca starch into the mixture bowl, beat well again. Then put the mixture in the pot, bring to a boil, then turn off the stove and let cool.
Step 4: Put the coconut rice in a pan and roast over low heat for a few minutes until the coconut rice turns golden brown.
Step 5: Add coconut rice and vanilla into the mixture bowl and use a whisk to stir the mixture well.
Step 6: Put the heavy cream in the blender and blend until the cream becomes creamy.
Step 7: Add the coconut milk mixture (cooled) above, continue blending until combined.
Step 8: Pour the ice cream mixture into a jar and put it in the refrigerator. After about 6 hours, you can take out the ice cream and enjoy.
